- Here is a sweet potato recipe from my mother-in-law, who dislikes the
- taste of sweet potatoes in general but likes this recipe.

- Orange/Sweet Potatos in Orange Shells

- Peal and mash 6 cooked sweet potatoes

- Cut 6 oranges in half, juice, and remove the pulp completely from
- shells.

- Use the following proportions:
- 1 Qt. mashed sweet potatoes
- 1/4 C. butter, melted
- 1/2 C. heavy cream
- 1/2 C. orange juice
- 2-3 Tbl. lemon juice
- 1 tea. lemon extract
- 1 tea. vanilla
- 2 eggs
- 1/2 C. molasses
- 4 round Tbl. brown sugar - Optional

- Start with the following, and add extra according to taste:
- 1/4 tea. ginger
- 1/4 tea. cinnamon
- 1/4 tea. clove
- 1/4 tea. nutmeg
- 2 Tbl. Curcacoa
- 1 Tbl. Courvoisier

- Mix all ingredients well. Pre-heat oven to 350 F if baking at
- this time. Fill the orange cups 2/3 to 3/4 full. The excess can be
- made into a casserole. Can be refrigerated at this point or half-bake
- before refrigeration. Total baking time: 30-45 min. at 350 F.
- Test for doneness with a straw put into an orange cup. Set is
- when it is not drippy. Put a marshmallow on top, and broil.
